Shrove Tuesday, popularly called Pancake Day in the UK, is the day before Ash Wednesday and the start of Lent. Traditionally households used up rich ingredients such as eggs, milk and butter before the fasting period, and pancakes were the natural way to do it. Pancake races are held in some towns, the most famous being at Olney in Buckinghamshire, which is said to date back to the 15th century. The date is 47 days before Easter Sunday, so it changes from year to year. A classic batter is a simple mix of flour, eggs and milk, and lemon and sugar is the traditional topping.
