What happens on Burns Night
Burns Night marks the birthday of the Scottish poet Robert Burns, born on 25 January 1759. Suppers are held across Scotland and around the world, usually following a familiar order: guests are welcomed, the Selkirk Grace is said, the haggis is piped in and addressed with Burns's poem "Address to a Haggis", and then it is served with neeps (swede) and tatties (potatoes). Speeches, toasts, songs and readings follow, and the evening usually ends with "Auld Lang Syne". A dram of whisky accompanies the toast to the haggis. Vegetarian haggis is widely available if you want to join in without the traditional recipe.
